All are viable. Standard concrete/clay tiles are cheapest and simplest. Flat roofs allow optimal angle choice. Slate costs slightly more. Metal roofs use different but equally effective mounting. Output is the same regardless of roof type.

Can you put solar on a thatched roof?

Not directly on the thatch — fire risk. Ground-mounted panels in the garden, or panels on an outbuilding, are alternatives for thatched properties.
